Cock-a-leekie soup with avocado

Ingredients

  • 1 tbsp olive oil
  • 30g unsalted butter
  • 2 large leeks, white part only, finely sliced
  • 1 tsp mild curry powder
  • 450g potatoes, chopped
  • 1 litre good, hot chicken stock
  • 284ml carton single cream
  • 100g cooked chicken breast, shredded
  • 25g long grain rice, cooked and chilled
  • 1 ripe avocado, peeled, stoned and diced

Directions

  1. The day before, heat the oil and butter in a large saucepan over a low heat. Add the leeks and cook, stirring for 10 minutes. Add the curry powder, stir for 30 seconds, then add the potatoes and stock. Bring to the boil and simmer for 10 minutes or until the potatoes are tender. Cool slightly, then blend in batches in a food processor until smooth. Return to the pan, cool, cover and chill overnight.

  2. To serve, add the cream, chicken and rice to the soup and season. Reheat until piping hot – don’t boil. Serve in cups topped with avocado.
