Raspberry Almond Christmas Bars

Ingredients

  • 1 envel. Robin Hood Pie Crust Mix
  • 1/4 cup raspberry jam
  • 3/4 cup butter/margine (softened)
  • red and green food coloring
  • 1 cup sugar
  • 3 eggs
  • 1 cup flour
  • 1/4 tsp. salt
  • Frosting:
  • 2 Tbsp. butter/margarine
  • 1 1/2 cups icing sugar
  • 2 Tbsp. milk
  • 1 tsp. almond extract

Directions

  1. prepare crust mix according to package.

  2. Line a 8" square pan with pastry (refrigerate remaining pastry).

  3. Spread jam on pastry.

  4. Cream softened margarine and sugar together.

  5. Add eggs, beating until light and fluffy.

  6. Add flour and salt, blend well.

  7. Divide batter in half.

  8. Add red food coloring for one and green to the other.

  9. Put small spoonfuls of each mixture alternatively on jam.

  10. Tap pan gently on counter to even batter.

  11. Bake at 350F for 35-40 minutes or until toothpick inseted in center comes out clean.

  12. Cool completely.

  13. Beat frosting ingredients together until smooth and creamy, adding enough icing sugar to make a spreading consistency.

  14. Spread over coooled squares.
