Southwest Soup

Ingredients

  • 2 cloves garlic, chopped
  • 1 onion, chopped
  • 1 lb boneless, skinless chicken breast, cut into 1 inch pieces
  • 1 28 oz ca whole tomatoes (5 tomatoes)
  • 2 cans chicken broth
  • 1 4-oz can whole chilies, chopped
  • 1/2 cup mild taco sauce or salsa
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Nature's Seasonings
  • 1 tsp Mrs. Dash garlic and herb seasonings
  • 1/2 cup white rice
  • Toppings:
  • 1/4 cup chopped greens onions
  • 1/4 cup chopped cilantro
  • 1/2 cup nonfat grated cheddar cheese
  • 1/2 cup nonfat sour cream

Directions

  1. Cook garlic and onion in nonstick pot for 3 minutes or until limp. Add remaining ingredients and cook for 15 minutes. Sprinkle soup with toppings and serve with tortilla chips
