Black Bottomed Butterscotch Balls

Ingredients

  • 6 tbsp (3/4 stick) butter
  • 1 cup cream peanut butter
  • 1 1/2 cup sifted powdered sugar
  • 1 9 oz pkg chocolate wafers, crushed into crumbs
  • 1 11 oz pkg (about 2 cups) butterscotch bake chips
  • 1/4 cup heavy whipping cream
  • 3/4 cup chopped, roasted, lightly salted peanuts or cashews

Directions

  1. Set aside an ungreased 13×9×2 inch baking pan.

  2. In a large mixing bowl, mix the melted butter, peanut butter and powdered sugar with a wooden spoon until blended. Stir in the chocolate wafer crumbs until combined. Press evenly into prepared pan, pressing down and smoothing surface with a square of wax paper. Refrigerated while preparing topping.

  3. In a heavy medium saucepan, set over low heat, melt the butterscotch chips with the whipping cream, stirring until melted and smooth.

  4. Spoon and spread butterscotch mixture over crumb mixture; sprinkle with the nuts. Refrigerate until set, about 2 hours. Cut into 48 bars. Store in covered containers between layers of wax paper.
