Livia’s Fried Mushrooms

Ingredients

  • 10-12 oz package white mushrooms, trimmed
  • 1/4 cup olive oil
  • 2 tbsp chopped fresh flat-leaf parsley
  • 2 large garlic cloves, thinly sliced
  • salt and ground pepper

Directions

  1. Place the mushrooms in a colander and rinse them quickly under cold running water. Drain the mushrooms and pat them dry. Cut the mushrooms in half, or into quarters if large.

  2. In a large skillet, heat the oil over medium heat. Add the mushrooms and cook, stirring often, until browned, 8-10 minutes. Sprinkle with the parsley, garlic, and salt and pepper to taste. Cook 2 minutes or more, or until the garlic is golden. Serve hot.
