Tomato Pie

Don’t let tomatoes be too juicy.

Ingredients

  • 3 Lg tomatoes; peeled and sliced
  • 1 teaspoon of salt
  • 1/2 pkg refrigerated pie crusts
  • 4 bacon slices
  • 3 medium sweet onions; halved and thinly sliced
  • 1 cup shredded sharp cheese
  • 1 cup mayonnaise
  • 1/4 teaspoon pepper
  • 1/2 cup grated Parmesan cheese
  • 2 Tablespoons fine dry breadcrumbs

Directions

  1. Place tomatoes on papertowels and sprinkle with 1/2 t salt. Let stand 30 minutes.

  2. Unfold pie crust and fit into 9" pie pan. Fold edges under and line with foil or weights.

  3. Bake at 425F for 10-12 min. Remove foil or weights.

  4. Cook bacon until crisp and drain on paper towel.

  5. Saute onions in 1 teaspoon bacon grease, medium heat 8-10 minutes.

  6. Crumble bacon and set aside.

  7. Spoon onions over pie crust and top with tomato slices.

  8. Stir together cheddar cheese, mayonnaise, pepper and remaining 1/2 t. salt. Spread mixture over tomatoes.

  9. Combine Parmesan cheese and bread crumbs and sprinkle over top.

  10. Bake 350F 30 minutes or until firm.

  11. Sprinkle bacon on top.
