Tomato and Onion Salad

Serves 6 people

Ingredients

  • 1/2 cup thinly sliced red onion
  • 3 tbsp white wine vinegar
  • 1/4 tsp salt
  • 5 medium tomatoes (about 1.5 lbs), cut into 1/2 inch thick slices
  • 4 large basil leaves, thinly sliced
  • black pepper
  • 1 tsp extra virgin olive oil

Directions

  1. In small bowl, toss onion with vinegar and salt; set aside 10 minutes. Place tomatoes on platter; top with onion mixture. Sprinkle with basil, pepper, salt and olive oil.
