Arugula and Parmesan Salad

Ingredients

  • 1 bunch arugula, washed and dried
  • 2 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • salt and pepper
  • Parmigiano-Reggiano

Directions

  1. Cut off the arugula stems. Tear the leaves into bite-sized pieces.

  2. In a large bowl, whisk together the oil, vinegar, salt and pepper. Add the arugula and toss well. Pile the salad onto two plates.

  3. Grete the cheese over the salad. Serve immediately.
