Endive, Pear, Roquefort and Walnut Salad

Ingredients

  • 2 Belgian endives
  • 1 medium head radicchio
  • 1 head soft leaf lettuce or mixed greens
  • 2 pears, sliced
  • 1/2 cup walnuts, chopped
  • 4 oz Roquefort, crumbled

Directions

  1. Wash and pat dry the endives, radicchio and lettuce; separate the leaves.

  2. In a large bowl, mix the endive leaves with the radicchio and lettuce and pour on just enough vinaigrette to lightly coat the leaves. Toss well and place on individual salad plates.

  3. Arrange pears around the salad and top with walnuts and Roquefort cheese.
