Apple Yogurt Cake w/ a Cinnamon-Sugar Streak

Ingredients

  • 1 1/2 c. whole-milk yogurt, well stirred
  • 2/3 c. EVOO
  • Juice of 1 lemon
  • 1 c. sugar
  • 3 lrg eggs
  • 1 1/2 tsp vanilla
  • 4 sm tart apples (1 1/2 lbs)
  • 2.5 c. flour
  • 2.5 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • Pinch nutmeg
  • 2.5 tsp cinnamon (divided)
  • 1/2 c. packed br sugar
  • 2 tbsp unsalted butter, room temp

Directions

  1. Heat oven to 350

  2. Lightly grease 13×9 pan with baking spray or olive oil.

  3. In large bowl, whisk together yogurt, EVOO, lemon juice, sugar, eggs and vanilla.

  4. el and core the apples, and chop into chunks about 1/2 inch across. SHould have 3.5 – 4 cups. Stir into liquid ingredients.

  5. Add flour, baking powder, baking soda, salt, nutmeg and 1/2 tsp cinnamon and stir just until no lumps remain.

  6. In a small bowl, mix remaining 2 tsp cinnamon w/ the brown sugar and butter.

  7. Pour half the batter into prepared pan.

  8. Sprinkle batter with half the cinnamon-brown sugar mix, dropping it on the batter in small lumps. Spread remaining batter over the top and sprinkle w/ remaning cinnamon-brown sugar.

  9. Bake in preheated oven 45-55 mins, covering w/ foil at the end of the top is browning.

  10. When a tester comes out clean, transfer cake to a cooling rack and let it cool at least 15 mins.
