Graham Cracker Cake

Ingredients

  • 6 tbsp butter, soft
  • 1 c packed brown sugar
  • 2 eggs
  • 3/4 c. graham cracker crumbs
  • 3/4 cup brown sugar cookie crumbs (such as Lotus brand Biscoff, about 20 cookies)
  • 1/2 whole-wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 c. buttermilk
  • 1/2 tsp sea salt (optional)
  • 1/2 tsp turbinado sugar (optional)

Directions

  1. Oven – 350

  2. Coat a deep 9-inch cake pan w. cooking spray.

  3. Combine butter and sugar in a mixing bowl. Beat w/ mixer until fluffy. Beat in eggs, one at a time, until well blended.

  4. Combine graham cracker crumbs, cookie crumbs, flour, baking soda and powder and salt. Add crumb mix to butter mix, alternately w/ buttermilk, beating until well blended. Scrape batter into prepared pan. Sprinkle top w/ sugar and sea salt, if desired.

  5. Bake 40 min or until a wooden pick comes out clean.

  6. Serves 12
