Chopped Salad with Blue Cheese Dressing

Ingredients

  • 6 cups chopped iceberg lettuce
  • 2 cups sliced cucumber
  • 1 cup diced plum tomato
  • 1 cup sliced celery
  • 1 cup sliced radishes
  • 1 cup diced red bell pepper
  • 1/2 diced carrot
  • 1/2 cup thinly sliced green onions
  • 1/4 cup chopped fresh parsley
  • 3 tbsp capers, drained
  • 1 tsp dried oregano
  • 1/3 cup low-fat buttermilk
  • 1/4 cup crumbled blue cheese
  • 1 tbsp light mayo
  • 1 tbsp red wine vinegar
  • 1 tsp Worcestershire sauce
  • salt and pepper

Directions

  1. Combine first 11 ingredients in a bowl. To prepare dressing, combine buttermilk and remaining 6 ingredients, stirring with a whisk.
