Fresh Black Bean & Corn Salsa

  • 2 15 oz cans black beans, rinsed and drained
  • 1 16 oz bag frozen whole kernel corn, thawed
  • 2 large tomatoes (seeded and chopped)
  • 1 small red onion, diced
  • 1 or 2 jalapeno peppers (other varieties may be substituted for a spicier version)
  • 1/3 C chopped fresh cilantro leaves
  • 1 garlic clove, minced
  • juice of 2 limes
  • 2 t kosher salt or to taste


  1. Mix all ingredients together in a large bowl. Let the salsa chill in the refrigerator for a few hours to let the flavors mingle before serving. (Chilling overnight works even better.)
