Ingredients
- 3 eggs
- 3/4 cooking oil
- 1.5 c. sugar
- 1 Tbs fresh lemon peel
- 1/2 t. orange extract
- 1/4 t. vanilla
- 2 c. grated zucchini, peeled if skin is tough
- 2.5 c. flour
- 3/4 t. salt
- 1/2 t. cinnamon
- 1/4 t. ginger
- 1 t. baking soda
- 2 t. baking powder
- 1/2 c. chopped nuts
Directions

In lrg bowl beat eggs; add oil and sugar, beat well.

Add lemon peel, orange extract, vanilla and zucchini; beat.

In another bowl, mix flour, salt, cinnamon, ginger, baking soda and powder; stir into zucchini mix and add nutsl mix well.

Pour into greased 9×5 loaf pan.

Bake @ 350 for 1- 1 hour 15 mins.
