Chocolate Ripple Cheesecake

Ingredients

  • 1 c. flour, divided
  • 1 c. + 2 T. sugar, divided
  • 1/4 t. salt
  • 1/4 c. butter, chilled
  • 3 squares (1oz each) unsweetened chocolate, melted and divided
  • 3 pkgs (8oz each) cream cheese, soft
  • 2 t. vanilla
  • 6 eggs
  • 1 c. sour cream
  • Whipped cream (optional)

Directions

  1. In bowl, combine 3/4 cup of the flour, 2 Tbsp sugar and salt.

  2. With pastry blender, cut in butter.

  3. Stir in 1/3 of the melted chocolate.

  4. Press mix into bottom of 9 inch springform pan

  5. Bake @ 400 degrees for 10 mins.

  6. Cool

  7. In lrg bowl, mix cream cheese and remaining cup of sugar at low speed of mixer until smooth.

  8. Blend in remaning 1/4 cup flour and vanilla.

  9. Add eggs, 1 at a time, beating well after each addition.

  10. Stir in sour cream.

  11. small bowl, mix 1.5 cups of the cheese mixture w/ remaining 2/3 of melted chocolate.

  12. Put half of plain cheese mix on cooled crust.

  13. Top with half of chocolate-cheese mix.

  14. Add remaining plain cheese mix, then rest of choc/cheese mix.

  15. Cut through mixtures w/ spatula to form swirl pattern.

  16. Bake at 500 for 12 mins.

  17. Reduce heat to 200 and cool on rack 2 hours., away from drafts.

  18. Cover and refrigerate 8 hours.
