Lime Pear Jello

Ingredients

  • 1 large can pears in heavy syrup, drained but reserving 1 cup syrup
  • 1 cup boiling water
  • 1 t. white vinegar
  • 3 oz. pkg. lime jello
  • 8 oz. pkg. cream cheese
  • 1/2 t. ground ginger

Directions

  1. Dissolve jello in boiling water.

  2. Add 1 cup reserved pear juice, add vinegar.

  3. Cool until consistency of egg whites (freezer 40 minutes, stir a couple of times).

  4. Take cream cheese out of fridge to soften.

  5. Prepare ring mold while chilling by putting a few drops of oil and smear around to create a thin film.

  6. Cut up pears into dice.

  7. When jello thickens, pour enough into mold just to cover first marker.

  8. Put mold in fridge to cool.

  9. Beat softened cream cheese until soft, add ginger, add remaining jello and whip until smooth.

  10. Fold in pears gently.

  11. Spoon mixture over first layer in mold.

  12. Chill overnight.

  13. Remove mold by setting in an inch or so of warm water in the sink briefly, then turn over onto plate.
