Grandma’s Spaghetti and Meatballs

Ingredients

  • SAUCE
  • 3/4 c. chopped onion
  • 1 clove garlic, minced
  • 3 T. EVOO
  • 2 1lb cans tomato (4 cups)
  • 1/2 t. pepper
  • 1 bay leaf
  • 1 c. water
  • 1.5 t. salt
  • 2 6oz cans tomato paste
  • 1/5 t. crushed oregano
  • MEATBALLS
  • 4 slices dry bread
  • 2 eggs
  • 1/2 c. fresh parm
  • 2 T chopped parsley
  • 1 glove garlic, crushed
  • 1 t. oregano or basil
  • 1 t. salt
  • dash pepper
  • 2 T. EVOO

Directions

  1. Sauce:

  2. Cook onion and garlic in hot oil until tender, not brown.

  3. stir in remaning ingredients.

  4. Simmer uncovered 30 min

  5. remove bay leaf.

  6. Add meatballs and cook 30 mins longer.

  7. MEATBALLS

  8. Soak bread in some water 2-3 mins, then squeeze out moisture

  9. Combine bread with remaining ingredients, except oil and mix well.

  10. Form into balls

  11. Brown slowly in hot oil.

  12. Add to sauce and cook 30 mins more.
