Ingredients

  • 1 3/4 cup carrots
  • 1 cup potato
  • 1/4 cup red lentils
  • 1/2 tsp ground coriander
  • 300 mL milk

Directions

  1. Trim and peel the carrots and potato; chop into cubes and place in a pan.

  2. Rinse lentils thoroughly, discard any black bits and add to the pan.

  3. Add coriander and milk; bring entire mixture to a boil, then reduce heat and simmer for 40 minutes until lentils are soft.

  4. Mash until smooth; use refrigerated portions within 24 hours.
