First Fish and Veggies

Ingredients

  • 3/4 cup potato, peeled and chopped
  • 1 cup carrots, peeled and sliced
  • 125-g cod or sole fillet
  • sprig of parsley
  • 1/3 cup milk
  • 1 tbsp butter
  • 1 tomato, peeled, seeded and chopped

Directions

  1. Put potatoes and carrots in a pan and cover with water.

  2. Bring to a boil, reduce heat, cover, and cook for 20 minutes until veggies are soft.

  3. Meanwhile, put fish in a pan with milk and parsley; poach for 5 minutes until fish flakes easily.

  4. Strain the milk and reserve; flake fish, removing bones.

  5. Melt the butter in a pan and saute tomato until mushy.

  6. Drain the veggies and add the fish, tomato and 1/4 cup reserved milk.

  7. Puree to desired consistency.
