Warm Pancetta, Goat Cheese and Spinach Salad

Ingredients

  • 2 bags spinach
  • 1/2 cup or less fresh goat cheese
  • 1/3 lb thick sliced pancetta cut into 1 inch strips
  • EVOO
  • 1 T. minced garlic
  • 2 t. minced fresh thyme leaves
  • 1/4 c. sherry vinegar
  • S&P
  • 1/2 cup dried cranberries

Directions

  1. Crumble cheese over spinach.

  2. Cook pancetta in a medium skilled over medium heat until crispy; 8-10 mins.

  3. Drain and drippings; whisk in EVOO, garlic, thyme, vinegar and season.

  4. Don’t need to use all dressing!

  5. Serves 6-8
