Asparagus with Wasabi-Mayo Dip

Ingredients

  • 3 lb thin to medium asparagus, trimmed
  • 1 c. mayo
  • 4 T. soy sauce
  • 1.5 t. sugar
  • 2 t. lemon juice
  • 2 t. wasabi paste (or powder)

Directions

  1. Blanche asparagus in 2 batches in large saucepan of boiling salted water; 1 min.

  2. Transfer to cold water to stop cooking.

  3. Drain well and pat try.

  4. Whisk together mayo, soy sauce, sugar, lemon juice, and wasabi until sugar is dissolved.
