Vegetable Soup

Ingredients

  • 1 c. each: lentils, dried peas, navy beans
  • 1-2 onions
  • melted butter
  • garlic
  • carrots
  • celery
  • rutabagas
  • cabbage
  • 1 chicken bullion cube
  • beef bone, meat
  • tomato paste

Directions

  1. Mix lentils, peas, beans the night before; put into a pot of hot water and cover. Later, drain the water and replace. Next day, drain and rinse the beans.

  2. Add onions and garlic to a pan with melted butter. Cook until soft.

  3. In a big pot, cover beans with new water (approx. 1" above the beans); simmer. Scoop scum off top of water; continue until scum stops coming to the top.

  4. Then add vegetables (chop into small pieces). Add at correct cooking time for each; don’t overcook.

  5. Add bullion cube, beef bone, and any additional meat.

  6. Try beans after 1 hr.; add a squirt of tomato paste.
