Carbonnades de Boeuf a la Gueuze

Ingredients

  • 4 tbsp butter or lard
  • 2 1/5 lb spring beef, in chunks
  • 2 large onions, diced
  • 2 tbsp brown sugar
  • 2 tbsp vinegar
  • 1/3 cup flour
  • 17 oz gueuze beer
  • salt and pepper
  • 2 tbsp mustard
  • 1 slice bread

Directions

  1. Heat the butter in a heavy flameproof casserole until it sizzles. Sear beef chunks until well browned. Add the diced onions and sugar. Deglaze the mixture with the vinegar and sprinkle the flour on top. Mix well.

  2. Pour in the gueuze and add salt and pepper.

  3. Spread mustard on a slice of bread and place in the casserole.

  4. Cover and cook over low heat for 1 hour or until beef is tender, stirring occasionally with a wooden spoon. Taste and adjust seasonings.
