Pollo alla Cacciatora

Serves 4 people

Ingredients

  • garlic
  • onion
  • celery
  • 1 tsp. fresh rosemary
  • 1 lb. chicken thigh fillets (deboned, no skin, cut into bites-size pieces)
  • 1/2 c. white wine
  • 1, 14 oz. can chopped tomatoes (green pepper, celery, onion)
  • 2 bay leaves
  • 1/2 tsp. sugar
  • 1 14 oz. can navy or cannellini beans

Directions

  1. Cook the garlic, onion, rosemary, celery in oil; cook until translucent.

  2. Add chicken and stir well; salt and pepper.

  3. Pour in wine and let it come to a bubble before adding tomatoes, bay leaves, and sugar. Put lid on and simmer for 20 mins.

  4. Drain beans and add at end; warm through.
