Little Thimbles Shiue Schiue

Serves 8 people

Ingredients

  • 1 1/2 c. (6 oz.) ditalini pasta
  • 1/4 c. olive oil
  • 2 tsp. minced garlic
  • 5 plum tomatoes (approx. 1 lb.), chopped
  • 8 oz. fresh mozarella, drained and cut into 1/2" cubes
  • 8 large, fresh basil leaves, chopped

Directions

  1. Cook pasta; drain.

  2. Meanwhile, in a heavy, large skillet, heat the oil over medium heat. Add the garlic and saute until fragrant, about 1 min. Add tomatoes and saute just until heated through, about 2 mins. Add the cooked pasta.

  3. Remove the skillet from the heat. Add the cheese and basil and toss to coat. Season with salt.

  4. Serve immediately.
