Pecan Pie Bars

Ingredients

  • CRUST:
  • 2 cups flour
  • 1/3 c. sugar
  • 1/4 t. salt
  • 2/3 c. unsalted butter, cold
  • FILLING:
  • 3 eggs
  • 1 c. light corn syrup
  • 1/2 sugar
  • 1/2 brown sugar
  • 2 T. butter, melted
  • 1 t. vanilla
  • 1 2/3 cups chopped pecans

Directions

  1. en to 350.

  2. Line 9×13 with heavy foil and spray

  3. Combine flour, 1/3 c. sugar and salt. Cut in 2/3 cup butter until mix resembles coarse crumbs. Can use pastry blender or 2 knives.

  4. Sprinkle mixture evenly over prepared pan and press in firmly.

  5. Bake 20 mins.

  6. While crust is baking, prepare filling

  7. In large bowl, mix together eggs, corn syrup, 1/2 c. sugar, 1/2 c. brown sugar, 2 T. butter and vanilla until smooth.

  8. Stir in the chopped nuts.

  9. Spread filling evenly over crust as soon as it comes out of the oven.

  10. Bake for 25-30 mins until set.

  11. If top starts to brown, cover with foil .
