Pappardelle with Mushroom Ragu

Ingredients

  • 1/2 lb pappardelle pasta
  • 4 cloves garlic, sliced
  • 2 med onions, sliced
  • 4 T. EVOO
  • 1 lb wild mushrooms
  • 1/2 t. salt
  • pepper
  • 1 c. Marsala
  • 2 c. reduced sodium chicken broth
  • 1/2 cup Romano cheese

Directions

  1. Cook pasta.

  2. In large pot, saute garlic and onion in oil.

  3. Add sliced mushrooms, S&P and saute until mushrooms are tender.

  4. Add Marsala and simmer until it evaporates.

  5. Add chicken broth and summer until sauce is reduced by half.

  6. Add pasta and simmer 2 mins.

  7. Remove from heat and stir in cheese.
