Classic Ragu with Elicoidali

Ingredients

  • 1 onion diced
  • 1 carrot diced
  • 1 rib celery diced
  • 3 cloves garlic, sliced
  • 1.4 c. EVOO
  • 1/2 lb ground round
  • 1 can (150z) crushed tomatoes
  • 1 can (8oz) tomato sauce
  • 1/2 tomato sauce can of water
  • 2 T. salt
  • 1/8 t. nutmeg
  • pinch cinnamon
  • 1 lb elicoidali pasta
  • Grated pecorino

Directions

  1. Saute onion, carrot, celery and garlic in oil until onion is transparent.

  2. Add ground round and stir until meat is browned.

  3. Add tomatoes, tomato sauce and water, salt, nutmeg and cinnamon.

  4. Cook until bubbly, Lower heat and simmer 10 mins.

  5. Cook pasta.

  6. Drain pasta and add sauce and simmer 2 mins.

  7. Serve with cheese and fresh cracked pepper.
