Lemon Peper Ricotta Sauce with Calamarata

Ingredients

  • 1 lb calamarata pasta
  • 1/2 lb fresh ricotta cheese
  • 1 c. grated Romano or pecornio cheese
  • 1/4 cup melted butter
  • 2 T. EVOO
  • 1 t. salt
  • 1 t. pepper
  • 5 T. lemon juice

Directions

  1. Cook pasta al dente, drain and reserve 1 cup pasta water.

  2. in bowl, mush together ricotta, 1 cup grated cheese, butter, oil, S&P, lemon juice and 1/2 cup reserved cooking water. Add pasta and mix in. If necessary, add more pasta water to think sauce. It should be the consistency of sour cream.

  3. Serve with more grated cheese and pepper.
