Green Beans with Warm Bacon Dressing

  • 1/2 lb green beans, trimmed, cut into 2 inch lengths
  • 2 bacon slices
  • 1 T. chopped shallot or 4-5 green onion
  • 2 t. white wine vinegar
  • (Double for 4 servings)


  1. Cook green beans in salted water until tender, about 8 mins. Drain and transfer to shallow bowl.

  2. Meanwhile, cook bacon in medium skillet until crisp. about 8 min.

  3. Drain bacon on paper towel.

  4. Add shallot to skillet and saute 30 seconds.

  5. Remove from heat and cool slightly.

  6. Stir vinegar into shallot mixture in skillet.

  7. Season warm dressing to taste.

  8. Pour dressing over green beans and toss.

  9. Crumble bacon over top.
