South of the Border Chicken and Beans

Ingredients

  • 1/4 c. flour
  • 2 t. salt
  • 1/4 t. pepper
  • 1 chicken, cup up, approx 3 lb
  • 3 T. butter
  • 2 med onions, chopped
  • 1 clove garlic, minced
  • 1 can Southwestern JalapeƱo black beans with lime juice
  • 1 can (8oz) tomato juice
  • 3/4 t. chipotle rub
  • 1/4 t. hot sauce
  • 1 bay leaf

Directions

  1. In plastic bag, combine flour, salt and pepper.

  2. Dredge chicken with mixture in dutch oven over med heat, melt butter and cook chicken until light brown; 15-20 mins.

  3. Remove chicken to plate and keep warm.

  4. In same pot, cook and stir inions and garlic until tender; 5 mins.

  5. Add beans with liquid, tomato sauce, chipotle rub, hot sauce and bay leaf.

  6. Arrange chicken over top.

  7. Cover and cook over medium heat until chicken is tender; 45 mins.

  8. Can serve with Lime Rice

  9. 4-6 servings
