Sweet potato mash with quorn and cranberry

Ingredients

  • Ingredients (4 servings):
  • - 500 g sweet potatoes
  • - 500 g chicken breast
  • - 340 g (fresh) cranberries
  • - 250 ml water
  • - 1 tablespoon honey
  • - 1 apple (peeled and cut in to little pieces)
  • - cinnamon
  • - fresh black pepper
  • - 100 g low fat cream (4%)
  • - sweetener (I used stevia)

Directions

  1. Directions:

  2. - In a large pan boil sweet potatoes until tender, drain
  3. - Add the low fat cream, black pepper and cinnamon
  4. - Mash until smooth and creamy
  5. - Rinse the cranberries with cold water

  6. - Boil 250 ml water
  7. - Add the cranberries to the boiling water
  8. - Add the apple (little pieces), honey and cinnamon
  9. - Cook 15 minutes, add sweetener (stevia) (taste and add more if needed)
  10. - Heat up a pan

  11. - Season the chicken with fresh black pepper
  12. - Fry/grill the chicken breast
