Emerill’s Baked Salmon

Ingredients

  • 1 whole side of salmon, scaled, skinned, and de-pinboned
  • 2 t kosher salt
  • 1 t freshly ground white pepper
  • 1 t coarsely chopped fresh rosemary leaves
  • 1 lemon, very thinly sliced
  • 8 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil

Directions

  1. Set oven temperature to 425*F.

  2. Rinse salmon under cold water.

  3. Pat dry.

  4. Cut a piece of foil long and wide enough to encase salmon when folded over the center and folded up on the ends.

  5. Position the foil on a large baking sheet.

  6. Place salmon in middle, skin side down.

  7. Drizzle with olive oil.

  8. Sprinkle with salt, pepper, and rosemary

  9. Place lemon slices , onion, and garlic slivers on salmon.

  10. . Drizzle with olive oil again

  11. . Fold edges of foil up and over salmon.

  12. . Crimp foil to seal and create an airtight package.

  13. . Bake for 15 minutes, or until just cooked through, but still moist.

  14. . Serve immediately.

  15. . Serve with oven baked green beans.
