Zesty Salsa for canning

Ingredients

  • 10 c. chopped tomatoes
  • 5 c. chopped and seeded bell peppers (3-4 green, 3 red)
  • 5 c. chopped onions
  • 2 c. hot peppers, chopped and seeded
  • 1 1/4 c. cider vinegar
  • 3 garlic cloves, minced
  • 2 T. cilantro, minced
  • 3 t. salt
  • 1 can (6oz) tomato paste

Directions

  1. Combine all ingredients except tomato paste in large saucepot.

  2. Simmer until desired thickness.

  3. Stir in tomato paste.

  4. Ladle hot salsa into HOT jars, leaving 1/4 head space.

  5. Process for 15 min in a hot water bath.
