White Bean and Halibut Stew

Ingredients

  • 4 thick cut bacon slices, chopped
  • 1 c. sliced shallots
  • 3 T. EVOO
  • 6 garlic cloves, chopped
  • 1 14.5 oz can petite diced tomatoes in juice
  • 1 8oz bottle clam juice
  • 1/3 c. dry white wine
  • 1/2 (scant) t. saffron threads
  • 2 15oz cans small white beans, drained
  • 1.5 lbs halibut fillets, cut into 1.5 inch chunks

Directions

  1. Saute bacon and shallots in large pot over med-high heat until bacon is crisp. Add EVOO and garlic, stir 1 min.

  2. Add tomatoes with juice, clam juice, wine and saffron; bring to a boil.

  3. Reduce heat, simmer 5 mins.

  4. Add beans and fish; bring to simmer.

  5. Cover; simmer until fish is just opaque in center; about 5 mins.

  6. Season to taste
