Smoky Marinade for Pork

Nice for BBQ Pork Belly or Pork Spare Ribs

Prep time: 10 minutes
Cook time: 150 minutes

Ingredients

  • 2 cloves garlic, crushed
  • 1T smoked paprika
  • 2T brown sugar
  • 2T golden syrup
  • 1T white wine vinegar
  • 1T oil
  • 2T bbq sauce

Directions

  1. Mix all ingredients together.

  2. Place meat, skin side up, in marinade and leave 2 hours minimum, or overnight.

  3. Cook pork, skin side up, with skin rubbed in oil and sprinkled with salt.

  4. Place meat on rack to cook, so juices drip into pan .

  5. Cooking time:

  6. 30 minutes at 220oC, then lower heat to 180oC for further 2 hours.
