Shrimp Paella

Ingredients

  • 14 oz peeled and devained shrimp
  • 4 tbsp olive oil
  • 1/4 pus 1/8 tsp seasoned salt
  • 1 head cauliflower, trimmed cut into florets
  • 1 green pepper, cored and diced
  • 1 medium onion, chopped
  • 10 oz yellow rice
  • 3 Roma tomatoes, seeded and diced
  • 1 cup frozen peas, thawed

Directions

  1. Heat 3 tbsp oil in large lidded skillet over medium heat. Add cauliflower, pepper, and onion. Saute for 5 minutes. Sprinkle with 1/8 tsp seasoned salt. Stir in rice, tomatoes, and 2 1/4 cups water. Bring to a simmer. over and reduce heat to medium-low. Cook 18 to 20 minutes. About 5 minutes before rice is done saute shrimp and 1/4 tsp seasoned salt in a pan. Add shrimp to rice and mix. Gently add peas and mix. Heat through.
