Easy Fruit Cobbler

Ingredients

  • 3 cups desired frozen fruit, such as sliced peaches, raspberries, and/or blueberries, thawed overnight in refrigerator
  • 2 tbsp sugar
  • 1 tbsp quick-cooking tapioca
  • 1 cup packaged biscuit mix
  • 1 tbsp sugar
  • 1/4 cup milk
  • cinnamon-sugar

Directions

  1. eheat oven to 400. In a medium bowl, stir together undrained fruit, the 2 tbsp sugar, and the tapioca. Divide fruit mixture between two 10 oz ramekins or custard cups. In a small bowl, stir together the biscuit mix, the 1 tbsp sugar, and the milk until combined. Spoon batter over fruit mixture. If desired, sprinkle tops with cinnamon-sugar. Place ramekins in a shallow baking pan.

  2. Bake 25 minutes or until filling is bubbly and top is golden.
