Fresh Vegetables-Beef Barley Soup

Ingredients

  • 1 1/2 lbs beef stew meat
  • 1 sm bell peper, chopped 1/2 cup
  • 3/4 C 1-inch pieces greens beans
  • 3/4 C chopped onion
  • 2/3 C uncooked barley
  • 2/3 C whole corn
  • 1 1/2 C water
  • 1 t salt
  • 1 t chopped fresh or 1/2 t dried thyme leaves
  • 1/4 t pepper
  • 2 cans (14.5 oz each) ready-to-serve beef broth
  • 2 cans (14.5 oz each) diced tomatoes w/ garlic, undrained
  • 1 can (8 ounces) tomatoes

Directions

  1. Mix all ingredients in a large crockpot

  2. cook low heat 8-9 hrs or high heat 4-5 or until vegetables and barley are tender
