Pot Roast

Serves 5 people

Ingredients

  • 3 lb Pot Roast
  • 2 T shortening
  • 6 red potatoes, washed, peeled and quartered
  • 10-12 Baby carrots, washed
  • 2 stalks celery, washed and cut into 1/2 inch slices
  • 1 beef boullion cube
  • 1 C warm water
  • Salt and Pepper to taste

Directions

  1. Brown meat in heated dutch oven with 2 T shortening

  2. Add boullion cube and warm water

  3. Add quartered potatoes, salt and pepper.

  4. Add carrots and celery. Cook for 1 hour. Check and add more water if needed. Continue to cook 30-45 minutes until meat/potatoes are tender.
