Orange-Ginger Turkey Meat Loaf

Ingredients

  • 1 orange
  • 1 slice whole wheat bread or
  • 1/2 cup whole wheat bread crumbs
  • 1 lg egg white
  • 1 tbsp grated fresh ginger
  • 2 cloves garlic, finely chopped
  • kosher salt and pepper
  • 1 medium carrot, coarsely grated
  • 1/2 cup fresh cilantro, roughly chopped plus
  • 1 cup leaves
  • 4 scallions, thinly sliced
  • 1 1/4 lb lean ground turkey (white meat)
  • 2 tbsp hoisin sauce
  • 2 tbsp ketchup
  • 6 cups mixed greens
  • 1 tbsp olive oil

Directions

  1. at oven to 375. Line a rimmed baking sheet with foil. Using a veggie peeler, remove 2 strips of zest from the orange and very thinly slice on a diagonal; transfer the zest to a large bowl and set orange aside. If using bread, pulse in a food processor. Add egg white, ginger, garlic, 1 tbsp water, and 1/2 tsp each salt and pepper to the bowl with zest and whisk to combine. Stir in the bread crumbs. Add carrot, chopped cilantro and half of the scallions. Mix. Add the turkey and mix. Transfer to baking sheet. Shape into 9x 3 1/2 loaf and bake 25 minutes. In a small bowl combine hoisin and ketchup. Brush on loaf. Cook another 10-15 minutes. Let rest 5 minutes before slicing.

  2. Cut away orange peel and pith and gently slice. Toss with greens, oil, basil or cilantro, scallions, and 1/4 tsp salt and pepper.
