Potato Chip/Pecan Sandy Cookies

Prep time: 20 minutes

Ingredients

  • 3/4 cup (1 1/2 sticks) butter, room temp.
  • 1 tsp vanilla
  • 1/4 tsp kosher salt
  • 1/2 cup sugar
  • beat until light and fluffy, about 3 minutes. On low speek beat in:
  • 1 1/2 cups flour until just incorporated.
  • Stir in 1/2 cup pecans and 2 cups, crushed, potato chips. Place 1/4 cup sugar in a small bowl. Roll Tbsp of dough into balls and roll around in the sugar to coat. Place on prepared (parchment) pans about 2 in. apart.
  • Press each into a 1/4 inch think round. Bake 16-18 minutes @350 degrees.
