Turkish Red Lentil Soup

Ingredients

  • 1 C red lentils
  • 1 med carrot - chopped
  • 1 med potato - chopped
  • 1 med onion - chopped
  • 1 T tomato paste
  • 1 tomato - chopped
  • 6 C water
  • salt and pepper to taste

Directions

  1. Boil carrots, lentils, and potato in water.

  2. Remove froth.

  3. In non-stick pan saute onion with oil of your choice or a little bit of the lentil water.

  4. Add tomato.

  5. Add paste.

  6. Add to boiling lentil mixture.

  7. Simmer ~20 min.

  8. Use immersion blender (or regular blender) to blend slightly.
