Zuppa Tuscano Soup

Ingredients

  • 1/3 C onion
  • 1T garlic
  • 1 1/4 C chicken broth
  • 1C potatoes (cubed into 1/4 inch cubes)
  • 1C milk
  • 1/2 t salt
  • 1T parsley
  • 1T corn starch
  • 8 oz sausage (1/2 of Turkey Sausage recipe)
  • 1C spinach or kale

Directions

  1. Saute onion and garlic in a little broth in a large pot.

  2. Add potatoes, 1C broth, milk, salt, pepper, and parsley.

  3. Boil – reduce to low and simmer 20 min.

  4. Mix remaining broth with corn starch and add to simmering pot.

  5. Cook for 1 min.

  6. Chop spinach and add to soup with sausage. Cook 10 min.
