Thai Green Curry Chicken

Ingredients

  • 2 stalks lemon grass
  • 2 medium onions
  • 1 C fresh cilantro
  • 2" fresh ginger
  • 1/4 C fish sauce
  • 1 jalapeno
  • 4 cloves garlic
  • 1 T ground coriander
  • 2 t sugar
  • 1 t grated lime peel
  • 1 can coconut milk (14oz)
  • 12 chicken thighs (skin removed)

Directions

  1. Cut everything into pieces, put in a bowl, (take all the seeds out of the jalapeno) pour in the coconut milk and use immersion blender to form a smooth sauce.

  2. Put in crock pot.

  3. Brown chicken thighs in oil on stovetop.

  4. Add chicken to sauce in slow cooker.

  5. Cook on low for 3 hrs (High for 2 hrs)
