Mango and Chicken Quesadilla with Arugula Salad

Ingredients

  • 4 cups lightly packed arugula
  • 1 tablespoon olive oil
  • juice of 1/2 lemon
  • freshly ground black pepper
  • cooking spray
  • 4 8 inch whole wheat tortilla
  • 1//4 cup mango chutney
  • 2/3 cup precooked chicken breast stips
  • 1/4 pound brie, thinly sliced

Directions

  1. Place arugula in a large bowl, top with olive oila nd lemon juice and season to taste with black pepper; toss well.

  2. Coat skillet with cooking spray and heat over medium. Top two tortillas evenly with chutney, chicken, and Brie, leaving a 1/4 inch border; cover with remaining tortillas.

  3. Place one quesadilla in the skillet and cook for about 2 minutes or until bottom is golden brown and crisp; flip and repeat on second side. Transfer to a cutting board and repeat with a seond quesadilla. Cut each into four wedges and divide evenly among four plates; serve immediately witht he arugula salad.
