Frost Piña Colada Pops

Ingredients

  • *1 can (8 oz) crushed pineapple in juice, undrained
  • *1 cup boiling water
  • *1 pkg (4-serving size each) JELL-O brand piña colada flavor gelatin
  • *ice cubes

Directions

  1. DRAIN pineapple, reserving the juice. Meanwhile, stir boiling water into dry gelatin mix in large bowl at least 2 minutes until completely dissolved. Add enough ice cubes to reserved pineapple juice to measure 1 cup. Add to gelatin; stir until slightly thickened. Remove any unmelted ice.

  2. REFRIGERATE 15 minutes or until thickened but not set. Stir in pineapple. Pour evenly into 6 (5 oz) paper or plastic cups. Freeze 1 hour.

  3. INSERT wooden pop stick into center of each cup. Freeze an additional 3 hours or until pops are firm. Remove from freezer about 5 minutes before serving; let stand at room temperature to soften slightly. Peel off paper cups just before serving. Store leftovers in freezer.

  4. NOTE: You can add ½ teaspoon coconut extract with the pineapple juice for a different flavor.
