Melting Moments

Serves 40 people

Ingredients

  • 125g butter, softened
  • 1/2 cup icing sugar
  • 1/2 cup custard powder
  • 1 cup SR flour

Directions

  1. Cream: 45g softened butter, 1/2 cup icing sugar, 1 teaspoon vanilla essence and 1-2 tablespoons milk, if needed

  2. Beat butter in bowl with electric mixer until light and fluffy. Add sifted icing sugar. Beat until just combined. Fold in sifted custard powder and flour.

  3. Roll teaspoons of mixture into balls (Tom Bowler size). If too sticky, add extra flour. Place on lightly greased baking tray, 2 inches apart. Flatten lightly with slightly damp fork.

  4. Bake in moderate oven for 15mins or till lightly browned. Cool on wire rack. Join 2 biscuits with vanilla cream.
