Chilli Nutty Chicken

Ingredients

  • 8 chicken thigh fillets
  • 1/3 cup crunchy peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lemon juice
  • 400g can tomatoes, chopped roughly
  • 4 banana chillies, seeded and sliced
  • 1/2 cup sliced green shallots
  • 1 tablespoon unsealed peanuts

Directions

  1. Place chicken in shallow casserole dish. In a saucepan combine peanut butter, soy sauce, lemon juice, tomatoes, banana chillies and shallots. Bring to boil.

  2. Pour sauce over chicken, sprinkle with peanuts and bake, uncovered, in moderate oven for 30mins.

  3. Serve with steamed rice.
