Pan-Fried Tofu

Great on soba noodles, in spring rolls, and for stir fries.

Ingredients

  • 1 box extra firm tofu
  • 2-4 T neutral oil (with high smoke point)
  • salt

Directions

  1. Drain tofu and cut into ~3/8" slices

  2. Soak tofu slices in hot, salted water for 15 minutes

  3. Dry tofu thoroughly by laying slices in a single layer on a clean dishtowel and placing another dishtowel on top.

  4. Heat a large cast iron skillet over high heat with 2 T neutral oil. Check that your tofu is dry and put tofu on the skillet, leaving plenty of room around each piece. Cook on one side until it is a deep golden brown, then use a slotted spatula to flip.

  5. Optional: sprinkle with sea salt and season
